Sweet & Sour Chicken (5pts per cup)
2T olive oil
1lb boneless, skinless chicken breasts; chopped
1 large orange pepper; chopped
1 large yellow pepper; chopped
1 cup chopped broccoli
1 cup chopped cauliflower
1/2 cup chopped onion
2T teriyaki sauce
1tsp sesame oil
Heat olive oil in a large frying pan or electric skillet over medium heat. You know the oil is hot enough when you drop a small piece of vegetable into it and it sizzles.
Add chopped vegetables and stir fry until the broccoli is cooked. You know broccoli is cooked properly when it turns bright green.
Add chopped chicken and continue to stir fry until chicken is cooked thoroughly. About 5 minutes.
Remove from heat and top with teriyaki sauce and sesame oil. More sesame oil can be added to taste, but remember to add the extra points!
Weight Loss Tip: Orange and yellow peppers are better for the metabolism and add more color than plain green peppers.
