Italian Skillet Chicken

Ingredients
2 tsp olive oil
2 small white onions, chopped
6 baby carrots, chopped
1 celery stalk, chopped
3/4 pound boneless, skinless chicken breasts, sliced into strips
1 can crushed tomatoes
1 tsp basil
1/4 tsp black pepper

Directions
•    Heat the oil in a large skillet over medium heat
•    Add onions, carrot, and celery. Cook until softened.
•    Add chicken and cook until opaque
•    Stir in tomatoes, basil, and pepper. Reduce heat and simmer, stirring occasionally until chicken is cooked thoroughly.
