Mashed Sweet Potato Surprise
Preheat Oven: 350 F

4 lg. sweet potatoes
1 cup of Splenda
3/4 cup of sugar free maple syrup
5 tsp of cinnamon
1/4 cup and 2 T. of f/f spray butter
1/4 cup crushed nuts (any kind you want, I used almonds)

Peel and cut potatoes into small chunks

Place potatoes into boiling water, cook until tender enough to mash. Drain potatoes from water, place in lg. bowl with 3/4 cup of Splenda, 1/2 cup of s/f maple syrup, 4 tsp of cinnamon, 1/4 cup of f/f spray butter. Mix all ingredients well with electric mixer. When all mixed together spread mixture into baking dish (8" x 8" pan)

Topping:

Mix crushed nuts, 1/4 cup of Splenda, 1/4 cup of s/f maple syrup, 1 tsp of cinnamon, and 2 T. of f/f spray butter together and spread evenly on top of potato mixture. (you can leave the nuts out if you would like)

Place in oven for about 30 minutes.
