Zucchini Pancakes
2 cups shredded zucchini
1/3 cup oat flour
1 egg
1/4 cup parmesan cheese (fresh or dry)
black pepper
Beat egg and add the rest of the ingredients except zucchini.
Mix well. Add zucchini and fry until brown on each side.
You can use either a butter spread or just spray the pan with non-stick spray.
