French Toast Bake
12 slices of low carb whole wheat bread
16 oz low fat cream cheese or ricotta
12 eggs (or equivalent in egg beaters)
2 cups fat free milk
1 teaspoon vanilla
1 teaspoon cinnamon
1/3 cup sugar free maple syrup
optional 1/4 cup raisins or sugar free dried blueberries
Trim and discard the crusts from the bread. Cube bread and place 1/2 of it into a 13x9 pan
sprayed with PAM. Dot with the cream cheese or ricotta. Sprinkle on optional raisins or
blueberries. Cover with remaining bread. Beat eggs and add vanilla, maple syrup and
cinnamon. Pour over bread.
Cover and refrigerate overnight. Uncover and bake at 375 degrees for 45 minutes in the
morning.
Serve with sugar-free maple syrup.
