1/2
cup balsamic vinegar
1/4 cup extra virgin olive oil
2/3 cup plain fat free yogurt
1/2 tsp ground black pepper
1/4 tsp salt
2 tbsp artificial sweetener (we use Splenda)
Two cucumbers, peeled and sliced
Four Roma tomatoes sliced
Mix all ingredients for the sauce in a large bowl or measuring cup, pour over sliced
cucumbers and tomatoes
