Roasted Veggies

You can use any vegetables for this. My favorites are chopped asparagus spears and chopped cauliflower. Zucchini and eggplant are good too. Chop your veggies into bite-sized pieces. Spray with a little canola oil spray or mix in a tsp of olive oil. Sprinkle with a little garlic salt. Bake in the oven at 350 for about 10 minutes... or longer if you like your vegetables crunchier.

Try it with Garbanzo beans and leave in until crunchy. Let dry on cookie sheet over night.. better than popcorn!
