Chick Peas Italiano
1 Tbsp olive oil
1 1/2 cup chopped onion (in lg chunks)
1 1/2 c chopped green bell peppers (in lg chunks)
2-3 cloves garlic (finely chopped)
1 15 oz can diced tomatoes (with juice)
2 15 oz cans chick peas (rinsed, drained)
1 8oz can tomato sauce (I have also used 8 oz SF spaghetti sauce)
1/2 tsp dried oregano
1/2 tsp dried basil
Heat olive oil in large skillet over medium heat. Add onions. Sauté until onions are
lightly brown. Add green bell peppers and garlic. Sauté 1-2 minutes to release garlic
flavor.
Add remaining ingredients, mixing well. Cover, reduce heat to low, and cook 20 minutes.
This is quick, easy, and very good. :-)
If you are on phase 2, you can serve it over brown rice or WW pasta. For phase 1, I serve
it in a bowl & eat with a spoon.
