Green Beans That Everybody Loves
1 thinly sliced onion
8 oz sliced mushrooms
1 or 2 garlic cloves, crushed
1 T olive oil
1 can diced or stewed tomatoes
1 tsp oregano
1 tsp basil (if fresh basil is used increase to 1 T)
1 28 oz can green beans (I use fresh, frozen or canned. Allen's Italian cut green beans
are the best)
If using canned or frozen green beans rinse in colander. Let them set in colander until
ready to use.
Heat olive oil in skillet over medium heat, when hot add onions. Sauté until tender.
Increase heat to medium-high, add mushrooms, cook for about 5 minutes, add the garlic and
herbs (if fresh basil is used add in last few minutes of cooking), cook for a couple of
minutes, then add tomatoes. Bring to a boil and cook for about 10 minutes; add green
beans. Bring to a boil and cook until heated through. For the frozen or fresh cook until
desired tenderness
