Mock Coffee Cake

Combine 1 can great northern beans (drained and rinsed), 4 eggs, 1t baking powder, 2T olive oil, 3/4c sugar substitute and blend until smooth. Poor in a greased 11x7 pan. Mix a little cinnamon and splenda in a bowl and sprinkle on top. Bake at 400 until toothpick is clear when inserted in the center. Works well as muffins too!
