Warm Greens with Herb Vinaigrette
1 TB olive oil
5 cups assorted greens (spinach, arugula, salad greens, etc
)
2/3 cup water
½ teaspoon salt
½ teaspoon white pepper
1 cup Herb Vinaigrette (below)
Directions:
Heat oil in large skillet over medium-high heat.
Add the greens, water, salt, and pepper, and heat, stirring gently until greens wilt.
(About 2 min)
Remove from heat. Toss with vinaigrette just before serving.
