6-oz can tuna, drained
1/2 cucumber, peeled, seeded & diced
2 small green onions, thinly sliced
2 T fresh dill, chopped
2 T nonfat yogurt
2 T mayonnaise
1/2 to 1 T Dijon mustard
lettuce leaves, or, for Phase 2, whole wheat bread, or whole wheat tortilla
Combine first 7 ingredients in small bowl. Mix well. Season generously with pepper.
Serve salad chilled on a bed of lettuce with dill sprigs and sliced ripe tomatoes or, if
you are in Phase 2, pile onto whole wheat bread with crisp lettuce for a sandwich. Also
makes a great wrap in a whole wheat tortilla with some greens of your choice.
