Cheese Sauce

1 T. oil
1 T. chopped green onions
1/2 cup sherry
1 c. FF half-and-half
8 oz low-fat cream cheese
1/2 c. parmesan cheese
1 c. shredded Gruyere or Swiss
1 t. lemon juice
nutmeg & black pepper to taste

To a heavy saucepan over moderate heat, add oil and chopped green onions and sauté for 2 or 3 minutes. Add sherry and allow it to almost evaporate, a minute or 2. Then add half-and-half to the pan and reduce heat to low. Cut cream cheese into 1-inch slices and add it to the pot. Allow the cream cheese to slowly melt into the half-and-half, 5 minutes. Add the remaining cheeses to the sauce and stir until melted and fully incorporated. Stir in 1 teaspoon lemon juice. Season sauce with, nutmeg and black pepper. Enjoy!
