Mock Corn Bread

Combine 1 can great northern beans (drained and rinsed), 4 eggs, 1t salt, 1t baking powder, 2T olive oil, 1/3c sugar substitute and blend until smooth. Poor in a greased 11x7 pan and bake at 400 until toothpick is clear when inserted in the center. Works well as muffins too!
