| Pioneer Bean Pot 1 pound dry kidney beans 1 onion, sliced 1 hamhock 2 teaspoons whole cloves 1 (8-ounce) can tomato sauce 1 tablespoon Worcestershire sauce 2 tablespoons molasses 1 teaspoon salt Soak dry kidney beans for 2 hours, drain. Cover with fresh water and heat to boiling. Add sliced onion, hamhock, and whole cloves. Simmer for 2 hours. Discard the cloves, then add tomato sauce, worcestershire sauce, molasses, and salt. Simmer 1 hour longer, adding a little hot water if necessary. Makes 4 servings. |
