Turkey Noodle Soup


1 large turkey leg
8 to 9 cups water
2 carrots, diced
2 stalks celery, diced
2 small potatoes, diced
1 small onion, diced
1 small tomato, diced
1 tsp parsley
1 tsp basil leaf
1 tsp onion powder
1 tsp salt
1 tsp pepper
1 cup noodles, broken

Boil turkey leg in water
Remove all fat that comes on top
Add carrots, celery, potatoes, onion and tomato
Bring to boil; reduce heat and add all the spices
When all is cooked, add noodles
Remove turkey leg; when cool enough to handle, remove meat from bone and break into small pieces
Return meat pieces to soup
Simmer for about an hour
Serves 4
