Saturday Soup
(Just as good any day)

Ingredients:
1 teaspoon oil
1 onion diced
1 Pkt Maggi chicken noodle soup mix,
3 cups boiling water
400g can tomatoes in juice
1-2 celery stalks, sliced.
1 carrot diced
2 potatoes diced
1-2 courgettes diced
1-2 tbs. chopped parsley,
freshly ground black pepper.
Heat oil in a large saucepan, add onion and cook over low heat 2-3 minutes.
Stir in soup mix, water & tomatoes and juice, bring to boil, stirring.
add the celery, carrot & potatoes. Cook over a moderate heat for about 8 mins.
Stir occasionally, add the courgettes & cook for a further 3-4 mins or until the
vegetables are tender. Season with pepper, serve sprinkled with parsley.
(Note: Suitable to microwave)
