Minestrone Soup
2 medium onions, chopped
3 cloves garlic, minced
4 Tablespoons vegetable oil
2 slices bacon, chopped
1/2 teaspoon thyme
1/2 teaspoon dried basil
4 tomatoes, chopped
1/2 cup apple juice
4 cups water
2 cup tomato puree
2 cups carrots, chopped
1 cup broccoli florets
1 cup pasta (tortellini is good)
Salt
Pepper
Parmesan cheese, grated
Sauté onions and garlic in oil. Add bacon and cook for 5 minutes.
Add thyme, basil, tomatoes, apple juice, water, and puree. Bring to boil and simmer about
1 hour.
Add carrots and broccoli; cook until slightly tender.
Add the pasta. Cook until tender.
Salt and pepper to taste.
Garnish with Parmesan cheese.
Serves: 8 to 10
