Cheese & Meatball Soup
2 cups water
1 cup whole kernel corn
1 cup chopped potato
1 cup chopped celery
1/2 cup carrot slices
1/2 cup chopped onion
2 Beef bouillon cubes
1/2 tsp. hot sauce
2 cups Velveeta Meatballs
1 pound very lean ground beef
1/4 cup bread crumbs
1 egg
1/2 tsp. salt
1/2 tsp. hot sauce
Mix, shape into small balls. Brown well. Set aside till soup ingredients are made.
Combine first 8 ingredients in a saucepan. Add browned meatballs,
stirring gently and bring mixture to a boil.
Cover and simmer on low heat until vegetables are tender, about 1-1/2 -2 Hrs.
Right before serving, add cheese, stirring gently until melted and blended.
