Crispy Fish Fry
Rub 4 white fish fillets with an onion and soak fish filets,
in half milk and half water mixed over night in a refrigerator
(do not reuse onion, throw away)
Enough white flour mixed with Corn meal to dredge (half and half).
2 beaten eggs mixed with 1/3 cup water and 1 teaspoon Lemon pepper
Next day, dry each piece of fish and dip in flour
with corn meal mix, then into egg batter and again
into flour mixed with corn meal.
Pan fry in Crisco lard or a substitute brand.
Melted oil should be about ½ inch deep and medium-high hot.
After browned, carefully turn fish over to cook the other side.
Fish is done as soon as it flakes.
Fish can also be submerged in a hot deep fryer.
