Cajun Fish
1 lb fish, thawed
½ t black pepper 2 T light oil (safflower, olive, or canola).
Or spray it on is even better, then you won't need so much oil.
½ t cayenne pepper
½ t white pepper
1 t paprika
½ t garlic salt
1/8 t cumin
¼ t marjoram
½ t parsley flakes
Combine all spices in a small bowl. Coat a side lightly in oil and
sprinkle spices. Lightly oil pan and cook on spice side
Repeat on other side. Cook at medium-high heat for about 2-3 minutes
on each side, unless you have thick slabs of fish.
If you dont like hot spicy foot, use ¼ t cayenne pepper.
It still has some kick using this, but not as much.
If you have a pump that you put your own oil in, this works the best,
as you can spray the pan and spray the fish, coat with spices,
and spray on top. Serves 3.
