Give a man a fish and he will eat for a day. Teach him
how to fish,
and he will sit in a boat and drink beer all day.
BAKED FISH
Pike, Cod or other fish cut into serving pieces
1 tablespoon water
Flour for dredging
Salt and pepper to taste
1 cup breadcrumbs
1 onion cut in half ( throw away onion after rubbing fish}
1/2 cup butter or half butter and half other shortening
1 egg, slightly beaten
2 tablespoon salt mixed with 2 cups milk
2 cups water to soak fish
Add onion to fish, season with salt and pepper;
set in a span and pour milk and salted water over fish,
keep in refrigerator over night.
Wipe fish dry and dredge in flour.
Thin a beaten egg with water, then dip fish
in egg and roll in breadcrumbs.
Fry in butter, or other shortening until brown.
Place in baking pan and bake about 25 minutes in 350-F oven.
Garnish with lemon slices and parsley
