2 c. chopped lobster
Melted butter
2 tbsp. flour
1 1/2 c. light cream
Salt and pepper to taste
4 egg yolks, well beaten
Pastry for 1 crust pie
Sauté lobster in 1/4 cup melted butter until heated
through. Melt 6 tablespoons butter in saucepan; stir in flour until smooth.
Add cream, salt and pepper; cook, stirring constantly, until smooth and
thickened. Stir small amount hot mixture into egg yolks, then stir back into
sauce. Add lobster; turn into casserole. Cover with pie crust. Bake at 375
degrees until crust is browned
