Zucchini-Vegetable Salad
2 small zucchini, sliced
2 small yellow summer squash, sliced
2 sticks celery, chopped
1 green pepper, chopped
1 red onion, chopped
1 can kidney beans
1 can veg-all
Mix above together in heatproof bowl.
Sauce:
1 c. sugar
1/2 c. vinegar
2 T. flour (I prefer Wondra)
2 T. prepared mustard
1 clove garlic, pressed
dash each salt and pepper
Heat to boiling and pour over vegetable mixture, toss and cool.
