Spinach Salad with Sweet & Sour Bacon
Ingredients
6 cups fresh spinach leaves, torn into pieces
1 cup sliced fresh mushrooms
1/2 cup strawberries, halved
1 (11-ounce) can mandarin oranges, drained with juice reserved
1 (1-ounce) package Ranch salad dressing mix
1 (2.4-ounce) jar HORMELŪ Bacon Pieces, divided
2 tablespoons cider vinegar
1/4 cup vegetable oil
1 tablespoon light brown sugar
Instructions
1. In large salad bowl, toss together spinach, mushrooms strawberries and oranges.
2. In another small bowl, whisk together salad dressing mix, 2 tablespoons bacon pieces,
vinegar,
1/4 cup reserved mandarin orange juice, oil and brown sugar.
3. Just before serving toss remaining crispy bacon pieces with salad and toss with
dressing.
