Chinese Chicken Salad

9 oz. pkg cooked chicken breast strips (or 3 small chicken breast halves, grilled and cut into strips)
2 tablespoons plus 1 teaspoon Soy Vay Cha Cha Chinese Chicken Salad Dressing
1 bag romaine lettuce
1 cup shredded carrots
10.5 oz. can mandarin orange sections, no sugar added
1/4 cup chow mein noodles

Place chicken in a small bowl; add 1 teaspoon dressing and mix well.

Cover bowl with plastic wrap and refrigerate 5 minutes so chicken absorbs the dressing.
In a large bowl, place lettuce, carrots and 2 tablespoons dressing.
oss thoroughly to coat vegetables. Add refrigerated chicken and toss again.
Add oranges, and toss gently. Top with chow mein noodles.
Makes 3 servings.
