Country Apple Roast

Ingredients
1 Lean boneless pork loin (about 3 lbs.)
1 large onion, peeled & quartered
2 cups applesauce
1/4 cup cider vinegar
1 1/2 teaspoons dried sage leaves
1 cup chicken broth
3 red cooking apples, cored & cut into 1/2 cubes
1/4 teaspoon nutmeg


Instructions
1. Place shallow roasting pan in oven, preheat to 350 degrees. Season roast with salt to taste.

2. Puree next 5 ingredients in blender or food processor. Place roast in hot pan pour puree over. Cook 70-80 min, until an instant read thermometer inserted into center of roast reads 155 degrees.

3. When roast is done, remove, place on platter and cover. Add apple cubes and nutmeg to sauce in roast pan. Stir thoroughly. Return pan to oven. Cook apples 5-10 min until just tender. Slice roast and top with apple mixture.
