ELFIE'S VENISON MEATBALL CASSEROLE

Recipe for: 10 servings
Ingredients:
2 1/2 Lbs. Venison ground
3/5 cup Minced onions
2 1/2 tsp. Salt
2 1/2 tsp. Caraway seed
1/3 tsp. Pepper
2 1/2 tbs. Salad oil or nonstick spray
2 1/2 cups Sauerkraut well drained
3 3/4 Large apples cut in wedges
2 1/2 tbs. Brown sugar
1 1/4 cup Apple juice

Procedure:
2. In large bowl, combine ground venison, onions, salt, 1 tsp. caraway seeds,
and pepper; shape into meatballs.
3. In large skillet over medium high heat, in hot oil, brown meatballs well.
4. In a 3 quart casserole, spread a layer of sauerkraut with 1 tsp. caraway seeds.
Next put a layer of apples, sprinkle with brown sugar; top with
meatballs.
Pour apple juice over meatballs; cover; bake 1 hour or until meat
is cooked.
