Green Chili Stew
1 pound ground beef
1 pound ground pork
8-10 Anaheim chilies, roasted*, peeled & chopped, or 3 (4-ounce) cans chopped green
chilies
4 medium potatoes, peeled & diced
1 28 oz. can diced tomatoes (or tomatoes & green chilies), undrained
2 cups water
1 garlic clove, or to taste
1 teaspoon salt, (optional)
1/2 teaspoon dried oregano
1/4 teaspoon each, ground: black pepper, coriander, diced onion (optional)
Cheddar cheese for garnish
In dutch oven, brown beef & pork; drain.
Add chilies, potatoes, tomatoes, water, garlic, salt, oregano, pepper, coriander &
onion
Cover, simmer 45 min. or until potatoes are cooked
Garnish with cheddar cheese
Makes 6-8 servings
