Barley Burger Stew
1/2 lb. ground beef
1 small onion, chopped
1/4 C. chopped celery
2 1/4 C. tomato juice
1/2 C. water
1/4 C. medium pearl barley
1 to 1 1/2 tsp. chili powder
1/2 tsp. salt
1/4 tsp. pepper
In a saucepan over medium heat, cook beef, onion and celery
until meat is no longer pink; drain
Stir in tomato juice, water, barley, chili powder, salt and pepper.
Bring to a boil. Reduce heat; cover and simmer for 50-60 minutes or until barley is
tender.
