Vegetarian Chili

1 tablespoon canola oil
2 cloves garlic, minced
1 large onion, chopped
1 green pepper, chopped
1 (19-ounce) can kidney beans, drained and rinsed
1 (19-ounce) can black beans, drained and rinsed
1 (28-ounce) can whole plum tomatoes, chopped in their juice
1 tablespoon chili powder
1 tablespoon ground cumin
1 tablespoon cocoa powder
1 ounce semisweet chocolate, chopped
1/2 cup cilantro, chopped
1 teaspoon salt
1/2 teaspoon pepper
Tabasco to taste

Heat oil in a large pot over medium.

Add garlic, onion and green pepper and cook 3 to 4 minutes, or until softened.
Add beans, tomatoes, chili powder, cumin and cocoa and bring to a boil.
Immediately reduce heat and simmer 25 minutes, stirring occasionally
Stir in chocolate, cilantro, salt and pepper. Season to taste with Tabasco
Makes 4 servings
