Meatless Chili
2 Tbs. corn oil
1-1/4 cups chopped onion
2 cloves garlic, minced
1 or 2 Tbs. chili powder
1/4 tsp. dried basil
1/4 tsp. dried oregano
1/4 tsp. ground cumin, optional
2 cups zucchini, diced
1 cup carrots, diced
2 lbs. tomatoes, cut in eighths
1 can (20 oz.) chick peas, drained
1 can (16 oz.) kidney beans, not drained
In 5-quart saucepot, heat oil over medium heat.
Add next 6 ingredients, cook, stirring, for 3 minutes or until onion is tender.
Add zucchini and carrots. Cook, stirring, for 1-2 minutes.
Stir in remaining ingredients. Bring to a boil.
Reduce heat and simmer for 30-35 minutes.
Serves: 6
