Chili

2 lbs lean ground beef
3 1-lb cans stewed tomatoes, crushed or canned plum tomatoes, crushed
1 1-lb can pinto beans
1 1-lb can black beans
2 onions, chopped
1 large green pepper, chopped
4 stalks celery, chopped
3 Tbsp chili powder
2 Tbsp cumin
1 Tbsp oregano
3 or 4 fresh chiles, chopped (decide on kind depending how how you like it)
4 cloves garlic
salt & pepper to taste

Saute the garlic in a large pot until lightly browned
Add onion and ground beef and saute, breaking up meat as it cooks; cook until no longer pink and drain off excess fat
Add the rest of the ingredients, except the beans
Stir and mix well, adjusting seasonings as you wish
Add some chopped or torn cilantro if you like the flavor
Bring to a slow boil and reduce heat and simmer for about an hour (if you like a little thicker or richer taste, you can add a can of tomato paste)
Stir at about 10-15 minute intervals
If you think it is a little too tart, add a little brown sugar--add more spices if you like it zippier - just to your taste
After it's cooked about an hour, stir well and add the partially drained beans
Heat through for about another 15 minutes
