Texas Beef Stew
1-1/4 lb. beef stew meat, cut into 1 inch pieces
1-2 Tbsp. cooking oil (optional)
1/4 Cup chopped onion
1-1/2 tsp. garlic powder
1/4 tsp. pepper
1 Cup water
1 can (16-oz) tomatoes with liquid, cut up
1 Tbsp. ground cumin
1 tsp. salt

In a large kettle or dutch oven, brown beef, adding oil if desired; drain
Add onion, garlic powder, pepper and water, bring to boil
Reduce heat; cover and simmer for 45 minutes or until meat is almost tender
Add tomatoes, cumin and salt; return to boil. Reduce heat; cover and simmer

   for 15-20 minutes or until meat is tender to your taste
Yield 4 servings (1 quart)
