ELFIES VENISON BOLOGNA

Recipe for: 28 Lbs.
Ingredients:
25 Lbs. Venison burger
3 Lbs. Fresh ground pork
2 cup Tender Quick salt
Sprinkle salt through meat. Let stand 24 hours. Add:
1 qt. Warm water
2 tbs. Liquid smoke
2 tbs. Black pepper
2 tbs. Crushed red pepper
1/2 cup Sugar
2 tbs. Anise seed
2 tbs. Onion powder or salt
2 tbs. Garlic powder or salt
2 tbs. Celery seed
1 jar Bacon bits crushed
Procedure:
1. Mix thoroughly.
2. Stuff in casings or roll in strips of cloth.
3. Boil slowly in water 45 minutes (160 degrees).
