KIELBASA SAUSAGE

Ingredients:

3 Lbs. Pork -- ground
1 Lbs. Ground beef
6 Cloves garlic -- minced
2 tbs. Salt
2 1/2 tsp. Black pepper -- coarsely ground
4 tsp. Brown sugar
1 1/2 tsp. Marjoram
1 tsp. Allspice
1/2 tsp. Liquid Barbecue Smoke(R) -- optional
4 tbs. Textured vegetable protein plus
1/2 cup Water -- optional
Sausage casings

Procedure:

1. Knead together the pork, beef, and garlic in a large bowl.
2. Combine the remaining ingredients in another bowl, then combine both mixtures, thoroughly
3. kneading the flavorings into the meat.
4. Stuff the casings to form 18 to 24-inch links, then tie the two ends together, forming a ring.
5. Refrigerate overnight to blend the flavors before cooking in your favorite manner.
6. Kielbasa may also be smoked.
