| Twice baked potatoes Vegetable: 4 large potatoes Spices: Other: 1/2 t salt 2 cups of low-fat shredded cheese dash of pepper 1/3 c skim milk 1/4 c green onions, chopped Preheat oven to 350F. Take a fork and poke 6-8 times around each potato and into top and bottom. Place potatoes into oven and cook for an hour. Remove potatoes. Keep oven mitt on free hand (you will regret it if you don't do this) and cut lengthwise through each potato, so that it opens up like a book. Scoop out potatoes and place into a bowl. Add spices, onions, milk, and only 1 cup of shredded cheese into a bowl and stir well. Place mixture back into each potato skin and sprinkle remaining cheese on the top. Spray top with canola oil (it will make the cheese gooey). Cook for another 20-25 minutes. For healthier eating, eat the skins. Serves 4. |
