This is a simple potato recipe which cooks while preparing the rest of the meal.
Preheat oven to 425'F
1/3 cup Grey Poupon Dijon Mustard
2 Tb.olive oil
1 clove garlic, chopped
1/2 tsp Italian seasoning (oregano, thyme, rosemary)
6 medium, red skin potatoes (about 2 lbs) cut into chunks
Mix all ingredients except potatoes in a small bowl.
Add potatoes and toss.
In a lightly greased shallow baking sheet or pan roast
for 35-40 min or until fork tender, stirring occasionally.
