Cheese Herb Baked Potatoes

4 medium size potatoes

Wash potatoes and bake, when done, while still hot cut length-wise,
scoop out into bowl. Mash and combine with herb ingredients, refill
skin shells and put in broiler and brown. See herb filling below

Herb Filling

All of the scooped out Potato
8 slices American cheese, cubed
2 tablespoons milk
8 tablespoons butter
1/2 teaspoon minced thyme
3 tablespoons cream
1/2 teaspoon finely chopped parsley
Salt and pepper to taste
1/2 teaspoon finely chopped chives or green onion tops

Mash everything together
