2 Tbsp Butter
1/2 Lb Fresh Mushrooms -- sliced
1/2 Tsp Salt
1/8 Tsp Garlic Powder
1/8 Tsp Pepper
1/4 Tsp Oregano
1 Lb Zucchini
1/4 C Fresh Bread Crumbs
1/4 C Grated Parmesan Cheese
3 Eggs
Saute mushrooms in butter until lightly browned and most of liquid has evaporated.
Stir in seasonings and herbs and set aside. Wash and peel zucchini and grate it
coarsely.
Combine zucchini with bread crumbs, cheese, and mushroom mixture.
Spoon into greased 8" square baking dish.
Beat eggs slightly and pour over zucchini mixture. Stir slightly with fork.
Bake uncovered at 325°F until set, about 35 minutes.
Serves: 6 to 8
