Mashed Sweet Potatoes with Pecans

2 LBS of sweet potatoes
¼ cup vanilla soy milk
2 TBS brown sugar
½ tsp ground ginger
1/3 cup chopped pecans


Boil sweet potatoes that have been well scrubbed and diced, until tender.
Drain place in a bowl with the soy milk. Mash until well mixed.
Add in brown sugar and ginger. Mash until all ingredients combined.

Top with pecans before serving.
