Stuffed Artichokes
Wonderful artichokes stuffed with bacon and cheese
For EACH artichoke:
1 cup bread crumbs
1 tbsp Parmesan cheese
1 strip raw bacon
2 pods garlic
dash of salt
large artichoke
Trim stem and about 1/2" from the artichoke top. Trim the sharp points from each
leaf.
Mix stuffing and push down in each leaf of artichoke. Put a pat of butter on top.
Place artichokes in a heavy pan with 1/2" water. Cover tightly and bring to a
very light boil.
Watch water level very carefully and should be cooked in 1 hour.
