Bread and Butter Pudding

Ingredients:
8 thick slices bread
50grams butter softened
¼ cup of sultana's, or raisins (or a jar of berry jam)
250gram of sour cream or creme fraiche
5 eggs
½ cup of caster sugar
1-2 teaspoons of finely grated orange or lemon rind (I use one of each)
2½ cups of milk (I prefer evaporated) more creamier
Grated nutmeg.
1 teaspoon of vanilla essence.
(1) Grease a shallow casserole oven baking dish.
Spread the bread evenly with the butter (and jam if using) cut into quarters
diagonally and place in dish (layer with sultanas if using).
(2) Beat together the eggs, sugar, rind, essence and the cream until thick and creamy,
pour over the bread, sprinkle with nutmeg.
(3) Bake in the oven at 180c for about and hour (you can put the dish in a water bath if
you wish)
cook until set, when a knife finds it firm, and clean.
Serve with Cream, or custard. Enjoy!!!
