ELFIES BACKPACKING BARS

Recipe for: 12 Bars

Ingredients:


3/4 cup All-purpose flour
1/2 cup Quick cooking oats; uncooked
1/2 cup Butter; softened
1/4 cup Toasted wheat germ
1 tbs. Orange peel; grated
1/2 cup Brown sugar; packed
2 Eggs
4 1/2 oz . Blanched almonds; whole
1/2 cup Coconut; shredded

Procedure:

1. Preheat oven to 350. In large bowl with mixer at low speed, beat
first
2. 5 ingredients and 1/2 c packed brown sugar until just mixed; at
medium
3. speed, beat 2 minutes (mixture will look dry). With lightly floured
hands,
4. shape mixture into a ball, then pat into 8''by 8'' baking pan. In
small bowl
5. with hand beater, beat eggs with 1/4 cup packed brown sugar; stir in
6. almonds and coconut. Pour evenly over mixture in pan. Bake 35
minutes or
7. until toothpick comes out clean. Cool in pan on rack. Cut into 12
pieces.
