Peanut Brittle
1 1/2 tsp baking soda
1 tsp water
1 tsp vanilla
1 1/2 cups sugar
1 cup water
1 cup corn syrup
3 TB butter
1 lb shelled,unroasted peanuts
1. Butter baking sheet. Combine soda, 1 tsp water, vanilla. Set aside.
2. Combine sugar, 1 cup water, and corn syrup in large pan.
3. Cook over medium heat , stirring occasionally stirring until 240° on candy
thermometer.
4. Stir in butter and peanuts. Cook, stirring constantly until 300°.
Watch carefully so mixture does not burn.
5. Immediately remove from heat; stir in soda mixture thoroughly.
6. Pour onto baking sheet and quikly spread to 1/4" thick.
7. Cool, break candy into pieces.
