CRUST:
2 c. graham cracker
crumbs
1/2 c. + 1 tbsp. melted butter
FILLING:
3 (8 oz.) bars cream
cheese (at room temperature)
1 pt. sour cream
1 c. sugar
3 eggs (at room temperature)
1 tsp. vanilla
TOPPING:
Fresh strawberries
or cherry pie filling
Use 10 inch spring
form pan. Preheat oven to 375 degrees.
Combine
crumbs and butter. Press into bottom and 2 inches up sides of pan.
Cream
together cream cheese, sugar, sour cream and vanilla.
Mixture should be smooth. Add the eggs, one at a time. Beat until fluffy.
There should be no lumps.
Pour filling into
crust. Bake at 375 degrees for 1/2 hour.
Leave cake in oven for one hour longer with oven turned off.
(Do not open oven door.) Remove cake from oven and let cool
before placing in refrigerator. When ready to serve, top with fresh
strawberries or pie filling. Remove from pan.
