2 c. cake flour
2 tsp. baking soda
1 tsp. salt
1 1/2 c. vegetable oil
2 c. sugar
2 tsp. cinnamon
4 eggs, slightly beaten
3 c. finely grated carrots, do not pack carrots firmly
Sift together flour, sugar, soda,
cinnamon and salt. Add to eggs and oil. Add carrots and mix well. Grease and lightly flour
3 cake pans. Bake at 350 degrees for 35 minutes. Frost with Carrot Cake Frosting below.
CARROT CAKE FROSTING:
1 box confectioners' sugar
1 (8 oz.) pkg. cream cheese
1/2 stick butter
2 tsp. vanilla
Let cheese soften to room temperature.
Then mix all ingredients. Spread between and on top of cake.
