1/2 cup water
1 tsp. sugar
2 1/4 tsp dry yeast
2 c. warm milk
8 tbsp. unsalted butter
3 1/4 teaspoon salt
2 c. all-purpose flour
2 large eggs
1/4 teaspoon baking soda
Combine warm water and dry yeast stir and let stand 10
minutes until frothy. Add milk, butter, salt, flour, to yeast mixture and beat
until smooth and blended.
Cover and let rise at room temperature overnight. The
next morning, preheat waffle iron.
Beat in the eggs and then add the baking soda. Pour the
thin batter onto a well-heated and seasoned waffle iron, and bake until golden
brown.
