DOWN ON THE FARM BREAKFAST
Reduce heat. Cover and simmer, stirring occasionally, about 20 minutes. Transfer to a long glass oven safe serving dish and sprinkle with pepper and cheese. Make 6 indentations with spoon and break eggs into indentations. Cover and bake in a 350 degree oven until the eggs are set.
NOTE: I generally make this ahead of time and freeze at this point. When unexpected overnight guests arrive, it can be thawed overnight and makes a hearty breakfast with little preparation the next morning.
