Strawberry Crepes:
1 c sliced strawberries
2 packets sugar substitute
1/2 c oatmeal, uncooked
1/2 c oat bran or oat bran flour
4 egg whites
1 c skim milk
1 T canola oil
1 t vanilla extract
fat free whipped topping
Combine strawberries and sugar substitute in a bowl and set aside. Place the rest (except
whipped cream) in a blender and blend for 20-30 seconds until smooth. Cover and let it
stand for 15 minutes. Lightly spray a 7" pan (or crepe pan if you have it) with a
non-stick oil (preferably canola) and warm up pan on medium-high. Pour about 1/3 c of
batter on the pan, letting it cover the bottom of the pan. Cook for about 1 minute, until
the underside is brown. Flip it over and repeat. Cover them up to keep them warm. Then in
each one, put some strawberries and whipped topping and roll up. Place a few strawberries
on the top. Serve with strawberry syrup. Makes 6 crepes. Yum!
